Carrot Cake Banana Nice Cream


I eat this almost every day for breakfast, because it's incredibly delicious and so good for you.

One serving of this ice cream provides you with 50% of your daily value of vitamin A, 30% vitamin C, 35% of your potassium, 60% of B6, and it tastes like cake.

1/3 cup grated carrots

2 cups frozen sliced bananas (about 2 1/2 large)

1/4-1/2 cup dairy free milk (vanilla flavored)

1/2 teaspoon pumpkin spice

Desired toppings

food processor/high powered blender

  1. Add your carrots and bananas into the food processor/blender and pulse a few times.

  2. Add in your dairy free milk (my favorites are Pacific's vanilla oat milk or Calafia's vanilla almond milk) and the pumpkin spice. Blend until smooth.

  3. Put in your favorite bowl and add your desired toppings. I added PB2 mixed with date syrup. This is my recommendation. Enjoy!
