Tikki Masala
I honestly can't think of anything more delicious than seitan enveloped in a creamy, spiced tomato sauce. This dish is guaranteed to be one of your new favorites. It only takes around 45 minutes to prepare, and it's a lot healthier, and more delicious than anything you could order. Whether you love it, or you've never tried it before, you're in for a treat.
1 lb seitan, cut into small pieces
1/4 cup unsweetened coconut yogurt
juice of 1/2 a lime
1/2 tsp garlic powder
1 tbsp coriander
1/12 tsp cumin
1/2 tsp cardamom
1/2 tsp nutmeg
1 1/2 tsp paprika
1/4 tsp cayenne
1 tsp ginger
1 large onion, chopped
1 large zucchini, chopped
3/4 cup tomato puree
3/4 cup vegetable stock
1/2 cup coconut cream
2 tbsp coconut aminos

In a large bowl, combine the seitan, yogurt, lime and garlic powder. Set aside to marinate while you prepare the sauce.
Combine the zucchini and onion in a large pot, and add some water to it. Cook over medium heat for about 10 minutes or until the vegetables become softened.
Add in the spices, and cook for 2 minutes, until fragrant. Add in the tomato puree, stock, coconut cream, and coconut aminos.
Bring up the heat to medium-high, and then when it comes to a boil, reduce it to medium low. Cook for 20 minutes.
Top with cilantro, serve with white rice and flatbread! Enjoy!
