Pumpkin Spice Banana Bread


1 can pumpkin puree (around 1 1/2 cups if using fresh pumpkin)

1 3/4 cups banana puree

1/4 coconut sugar

1/3-2/3 cup date/brown rice/maple syrup (depending on how sweet you like things)

2 tsp vanilla extract

3 cups flour

2 tsp baking soda

1 tbsp pumpkin pie spice

  1. Preheat your oven to 350 degrees fahrenheit.

  2. In a large bowl, combine the pumpkin, banana, coconut sugar, syrup of choice (I used date as always), and vanilla extract. Combine, and set aside.

  3. In a medium sized bowl, combine the flour, baking soda, and pumpkin pie spice.

  4. Add the wet into the dry, and mix until combined.

  5. Bake for 60-65 minutes (you can also make these into muffins, and you would just reduce the baking time to 40-45 minutes).
