"M&M" Cookies

I've been really doing my best to keep eating high carb low fat, especially since it's the new year. I wanted to make a great cookie recipe that is of course vegan, as well as oil free. The secret ingredient is actually AVOCADO! Which not many people think to put it in a sweet recipe, but it works so well. The best part is, that no one will even know, because there isn't enough of it to turn the cookie green. This cookie recipe tastes so indulgent, you could feed it to anyone and they would never believe you that these are actually free of eggs, milk, butter and oil! So go ahead, grab the ingredients and a friend and have fun in the kitchen, because you'll eat all of these in one sitting so be careful! They are soft, and oh so ooey gooey! Feel free to double this recipe if you want. This makes about 8-10 medium sized cookies.

1/2 cup unbleached all purpose flour

1/2 cup sweet white sorgum flour

2 tbsp granulated sugar

3/4 cup coconut sugar

1/2 tsp baking powder

1/4 cup heaping avocado puree

2 tbsp flax seeds

1 tbsp vanilla extract

3/4 cup dark chocolate little secrets

  1. Preheat your oven to 325 degrees fahrenheit. Prepare a baking tray with a silpat or parchment paper.

  2. In a small bowl, combine the 2 tbsp of flax with 6 tbsp of warm water. Let this sit for about 5-7 minutes, so that the flax can soak up the water and form an "egg like" texture.

  3. To make the avocado puree, add the avocado to a bowl, and mix with a hand mixer until there are no lumps. Add in the vanilla, flax eggs, coconut sugar and granulated sugar.

  4. In another bowl, combine the flours, and baking powder, add this to the wet ingredients, and then add in the little secrets.

  5. Use an ice cream scoop to drop the dough evenly onto the baking sheet, about 1 1/2 inches apart.

  6. Bake these for 20-25 minutes, and enjoy!
